Kitchen Preparation Science

  1. Preheat the oven to 425°F (220°C). Toss the beet cubes with 1 Tbsp (15 ml) of the olive oil, spread on a parchment-lined tray, and roast for 20–25 minutes, shaking once, until fork-tender.
  2. While the beets roast, rub the salmon with the dill, rosemary, and black pepper. Heat a skillet over medium heat and cook the salmon skin-side down for 4–5 minutes, then flip for 2–3 minutes until just opaque. Squeeze the lemon over the top in the final minute.
  3. In the same skillet, sauté the garlic in the remaining ½ Tbsp (7 ml) of olive oil for 30 seconds, add the greens, and cook 2–3 minutes until just wilted.
  4. Plate the salmon over the sautéed greens with the roasted beets alongside.

Kitchen science: Roasting beets concentrates their natural sugars and preserves more of their nitrates than boiling, which leaches water-soluble compounds into the cooking water. Cooking the greens quickly keeps their own nitrate content in the leaves where you can eat it.
