  1. Heat the olive oil in a pot over medium heat. Sauté the onion for 4–5 minutes until translucent, then add the garlic, ginger, turmeric, cumin, and black pepper. Cook for 60 seconds until fragrant.
  2. Add the lentils and broth. Bring to a boil, reduce to a simmer, and cook uncovered for 12–15 minutes until the lentils are tender and the curry has thickened.
  3. Fold in the spinach and cook 1–2 minutes until just wilted. Serve over the warm brown rice.
