Kitchen Preparation Science

Extra-virgin olive oil is the defining fat of the Mediterranean pattern, and its polyphenols — particularly oleocanthal — are linked to lower inflammatory markers in clinical trials. Lentils provide polyphenol-rich plant protein, and their fiber feeds the gut bacteria that produce short-chain fatty acids with systemic anti-inflammatory effects. Spinach adds lutein and vitamin K, while turmeric and garlic contribute curcumin and allicin, two of the most-studied botanical anti-inflammatory compounds.

Method:

  1. Heat 1 Tbsp of the olive oil in a pot over medium heat. Sauté the carrot and garlic for 3 minutes.
  2. Stir in the turmeric and cumin, then add the lentils and broth. Simmer covered for 20–25 minutes until the lentils are tender.
  3. Stir in the spinach and let it wilt for 2 minutes.
  4. Finish with the lemon juice, remaining olive oil, salt, and pepper, and serve hot.
