Method:

  1. Preheat the oven to 400°F (200°C). Toss the sweet potato with 1 Tbsp (15 ml) olive oil and black pepper, spread on a sheet pan, and roast for 15 minutes.
  2. Push the potatoes to one side; add the broccoli and roast 10 minutes more.
  3. Meanwhile, season the salmon. Heat 1 Tbsp (15 ml) olive oil in a skillet over medium-high heat. Cook the salmon skin-side down for 4–5 minutes until crisp, flip, and cook 2–3 minutes until just opaque. Remove and rest.
  4. In the same skillet, sauté the garlic and ginger for 30 seconds, add the soy sauce and lemon juice, then wilt the spinach for 1 minute.
  5. Plate the roasted vegetables, top with the salmon, and spoon the pan sauce over everything.
