Kitchen Preparation Science

Broccoli is the quiet star of this bowl: it’s one of the best everyday food sources of chromium, the trace mineral that helps your cells respond to insulin and keeps post-meal energy steady instead of spiky. Lean turkey delivers high-quality protein with minimal fat, which supports muscle maintenance — and muscle tissue is the body’s largest daily calorie consumer. Quinoa rounds out the plate as a complete-protein, low-glycemic grain that releases energy gradually through the afternoon.

Method:

  1. Rinse the quinoa, then simmer it in 1 cup (240 ml) of water for 12 to 15 minutes until the germ rings separate. Fluff with a fork and set aside to steam off.
  2. In a large skillet over medium-high heat, brown the ground turkey in 1 Tbsp (15 ml) olive oil with the cumin, half the garlic, and a pinch of salt, breaking it into small crumbles, about 7 minutes. Remove and set aside.
  3. In the same skillet, sauté the broccoli florets with the remaining garlic for 5 minutes until bright green and tender-crisp — you want structure, not mush. Toss in the chickpeas and cherry tomatoes for the final 2 minutes.
  4. Whisk the tahini, lemon juice, remaining olive oil, and 2 Tbsp (30 ml) of warm water into a smooth dressing. Build each bowl over quinoa: turkey, vegetables, then a generous drizzle of dressing.

Allergen Alert: Contains sesame (tahini).

Swerve / Alternative Option: For a sesame-free dressing, blend sunflower seed butter with lemon juice and water at the same ratios. For a plant-based bowl, swap the turkey for crumbled extra-firm tofu pressed and browned the same way.

Total prep time: 25 minutes. Leftovers hold for 3 days refrigerated — store dressing separately.
