Kitchen Preparation Science

This smoothie is a 3 p.m. craving tool: the kefir cultures and matcha green tea both support a healthy gut microbiome, while the banana and flaxseed fiber slow digestion so the natural sugars land gently. The frozen banana gives the body of a milkshake without any added cream, and the matcha supplies a steady lift with far less caffeine than a cup of coffee.

Method:

  1. Add the kefir, frozen banana, almond milk, matcha, and maple syrup (if using) to a blender.
  2. Blend on high for 45–60 seconds until completely smooth. If too thick, add almond milk 1 Tbsp (15 ml) at a time.
  3. Pour into a chilled glass and top with the toasted flaxseed.

Allergens: dairy (kefir), tree nuts (almond milk). Swerve/Alternative Option: use coconut yogurt and oat milk, and replace the matcha with 2 tsp (10 ml) of cooled brewed green tea for a gentler caffeine level.
